Potato and chorizo breakfast hash

Start your day with some hearty fuel with this deliciously simple potato and spicy chorizo breakfast hash made with yellow and sweet potato and green peppers. 



  • 1 yellow potato, diced
  • 1 sweet potato, diced
  • 1 cooking onion, diced
  • 1 green pepper diced
  • 2 tablespoons canola oil
  • 1/2 teaspoon salt
  • 250g chorizo sausage, removed from casing


  1. Preheat the oven to 375°F
  2. Place the potatoes, onion, and green pepper into a bowl.  Pour in the canola oil and salt and toss to coat the vegetables.  Tip it all out onto a baking sheet.
  3. Crumble the raw chorizo sausage over the vegetables and mix it in. 
  4. Place the baking sheet in the oven and cook for 30 to 40 minutes, stirring every 15 minutes,  until the potatoes are tender.
  5. Serve and enjoy!
