Ingredients
1 cup cooked edamame
1 cup canned lentils
2 cloves garlic, minced
1 tablespoon fresh parsley
1 tablespoon green onion
1 tablespoon fresh cilantro
1 teaspoon cumin
Juice of half a lemon
Salt and pepper, to season
Directions
Add the edamame and lentils to a food processor, and give a quick pulse then add the parsley, coriander, garlic, onion and cumin and pulse again.
Add the lemon and season with salt and pepper.
Shape the mixture into equal cakes.
Place them into the air fryer and spray with avocado oil and place in the air fryer for 15 minutes flipping halfway through.
Add to your favourite salad base or eat on the go.
