Rhubarb cocktail

  • 1/4 cup rhubarb syrup, reserved from the roasted rhubarb
  • 1/4 cup gin or vodka
  • 2 tablespoons lemon juice
  • Sparkling wine


  1. In a cocktail shaker filled halfway with ice, combine the rhubarb syrup, gin or vodka, and lemon juice and shake vigorously for about 20 seconds. Strain into two wine glasses or Collins glasses and top with sparkling wine. Add a garnish or lemon or rhubarb if desired and enjoy!
