The un-beet-able

Ingredients

'Orange' ingredients

  • 1/2 cup (150 grams) date puree
  • 1/2 cup (150 grams) unsweetened applesauce
  • 2 eggs

'Blue' ingredients

  • 1-1/2 teaspoons (7 milliliters) pure vanilla extract
  • 1/2 teaspoon (2 milliliters) baking soda
  • 1 tablespoon (15 milliliters) baking powder

'Pink' ingredients

  • 1/2 cup (65 grams) quinoa flour
  • 1/3 cup (50 grams) raw beet powder (dehydrated beets)
  • 1/4 cup (40 grams) chia seeds
  • 1/2 cup (65 grams) shelled green pumpkin seeds
  • 1/2 cup (100 grams) white chocolate chips

Directions

  1. Preheat the oven to 350°F (180°C).
  2. In a bowl, combine the ingredients from the orange section.
  3. Add the ingredients from the blue section. Wait for a light frothing to occur (just for fun), then mix well.
  4. Mix in the ingredients from the pink section until fully combined.
  5. Line a baking sheet with parchment paper or a silicone mat—otherwise, everything will stick.
  6. Drop spoonfuls of dough to create beautifully round energy cookies and decorate as desired.
  7. Bake for about 15 minutes. Transfer the baked cookies to a cooling rack, and bask in their mouth-watering aroma. These purple cookies are filled with goodness.
