Witchy avocado dip (guasacaca)

Ingredients

AVOCADO DIP

  • 2 avocados, pitted and peeled
  • 1 small sweet Spanish onion, roughly chopped
  • 1 cup fresh parsley
  • 1 cup fresh cilantro
  • 1 small green pepper, seeded
  • 1 jalapeno
  • 2 cloves garlic
  • 1 lime, juiced
  • 3 tablespoons of rice vinegar
  • 1/4 cup olive oil
  • Salt, to taste

TO GARNISH

  • Shredded cheddar cheese (Witch’s hair)
  • Pitted Kalamata olives (Witch’s eyebrows)
  • Sliced pimento olives (Witch’s eyes)
  • Gherkin/cornichon (Witch’s nose)
  • Sliced end of a sprouting carrot (Witch’s wart)
  • Sliced radish (Witch’s lips)
  • Blue corn tortillas chips (Witch’s hat)

Directions

  1. Blend all ingredients for avocado dip in a food processor until smooth. Pour into the bottom 3/4 of an oval below and spread into an even layer.
  2. Garnish with cheddar cheese to create witch’s hair, Kalamata olives for the eyebrows, pimento olives for the eyes, a gherkin for the nose, the sliced end of a carrot for the wart, and sliced radishes for the lips.
  3. Arrange tortilla chips above the head to create the witch’s hat. Enjoy!
