Ingredients
For the fish:
- 2 branzino, cleaned
- 2 tbsp olive
- Kosher salt
For the sauce:
- ¼ cup white wine vinegar
- 1 clove garlic, finely minced
- ¼ cup finely chopped mint
- Kosher salt
- ½ cup olive oil
Directions
- Heat a grill to 400 degrees Fahrenheit. Ensure that the grill is clean, and oil generously.
- Cut 3 shallow diagonal slits onto each side of the branzino. Rub the outside and cavity with the olive oil and salt to taste.
- Place the branzino on the grill and leave it untouched for 5-7 minutes to crisp the skin. Using a fish spatula, flip the fish and cook for another 4-5 minutes or until the flesh is opaque.
- Alternatively place the fish on a lined baking tray and broil for 5-7 minutes on each side or until the skin crisps and the thickest part of the flesh is opaque and flakes easily.
- Transfer to a serving platter.
- To make the sauce, add the vinegar, garlic, mint, and salt to a bowl. Mix well until the salt has completely dissolved. Then whisk in the olive oil.
- Pour the sauce over the fish and serve.
