Temsy cocktail

This cocktail was inspired by one of my favourite songs ICE T by Tems, a very talented Nigerian singer. Aside from the obvious reason why scotch gets a bad “rep” for cocktails (cost), a lot of people veer away from the smoke. But much like we learn from cuisines like barbecue or jerk, smoke can and does add a depth of flavour. I have a deep love of peaty drinks, well-made single malts, and companies that move into the community. This year I was able to collaborate with Bowmore to donate $10,000 to Nellie’s Shelter.

Ingredients
- 1.75 oz scotch
- 0.25 oz tea-infused Grand Marnier
- 0.75 oz fresh lime juice
- 0.5oz salted tamarind and vanilla syrup
- 1 dropper chocolate bitters
- 1 oz strong ginger beer
Directions
- Combine scotch, tea-infused Grand Marnier, lime juice, salted tamarind vanilla syrup, and bitters in a large collins glass.
- Fill the glass nearly full with crushed or pebble ice and swizzle with a swizzle stick or bar spoon until frost forms on the outside of the glass.
- Top with ginger beer. Lightly mix in with a bar spoon.
- Garnish with mint sprig. Serve and enjoy!
