Butterflied tiger shrimp and lamb lollipops with grilled vegetables

Grill it up Aussie-style with this delectable surf and turf feast of buttery and tender tiger shrimp, melt-of-the-bone lamb lollipops and veggies to bring it all together.  Tip: To butterfly shrimp, use a sharp knife to slice lengthwise down the topside of the shell and through the meat, leaving the backside of the shell intact; remove the vein (if necessary) and leave shell on.

Ingredients

  • 1/3 cup olive oil
  • 1/3 cup freshly squeezed lemon juice, plus 2 teaspoons lemon zest
  • 2 tablespoons liquid honey
  • 4 cloves garlic, minced
  • 2 teaspoons sea salt
  • 2 tablespoons chopped oregano leaves or 1 teaspoon dried oregano
  • 2 teaspoons chopped thyme leaves
  • 1 teaspoon red chilli flakes
  • Freshly cracked black pepper
  • 18 jumbo tiger shrimp, butterflied
  • 2 frenched racks of Austalian lamb (about 8 bones) cut into single bone chops
  • 3 bell peppers, cored and cut into quarters
  • 1 large sweet onion, peeled and sliced into 1/2 inch rounds
  • 4 cobs corn, shucked and snapped into halves
  • Grilled lemon, garnish (optional)
  • Extra oregano sprigs, to garnish (optional)

Directions

  1. Whisk together olive oil, lemon juice and zest, honey, garlic, salt, oregano, thyme, chilli flakes, and pepper in a bowl.
  2. Prepare three large bowls. Add shrimp to one bowl, lamb to the second and vegetables to the third. Divide the marinade equally between the bowls. Toss well to coat (careful to keep onion rounds intact).
  3. Cover and let marinate in the refrigerator for a minimum of one hour. Let lamb sit at room temperature for 20 minutes before grilling. 
  4. On preheated grill over high heat, cook shrimp and lamb, flipping once, until shells are pink and meat is opaque and cooked through about four to five minutes.
  5. Cook lamb, flipping once just until charred, about four to five minutes for medium.
  6. Grill vegetables, occasionally flipping, until charred and tender, about eight to 10 minutes. 
  7. Serve all together and enjoy!
