Savoury Cheese, Almond and Herb “Brittle”

A cheesy and crunchy brittle that will satisfy that salty pre-dinner craving.

Ingredients

  • 3 cups freshly grated parmesan cheese (coarse)
  • 1 cup slivered almonds
  • 1 tablespoon picked thyme leaves (or 1 1/2 teaspoons dried thyme)
  • 1 teaspoon freshy cracked black pepper
  • 1/2 teaspoon sage

Directions

  1. Preheat oven to 350F (176C) and line a large sheet pan with parchment paper.
  2. Combine all ingredients in a bowl and toss together. On a prepared sheet pan, spread the mixture into an even thin layer (about 16x12 inches) and bake until very lightly golden, about 10-12 minutes. Cool completely, crack into pieces and store in an airtight container until serving.
  3. Store for up to 1 week. Use on charcuterie boards, bagged as a gift or cracked onto acidic salads. Enjoy!
