Baked cod en papillote with mixed vegetables
Ingredients
- 4 x 150g Cod filets (or use snapper, halibut, etc.)
- 4 tablespoons olive oil
- 1 zucchini, julienned
- 1 carrot, julienned
- 1 red pepper, julienned
- 1 fennel bulb, julienned
- 2 cloves garlic, finely minced
- 1/4 bunch parsley, finely chopped
- 4 sprigs thyme
- 4 tablespoons butter
- 1/2 cup white wine
- 1 egg white
Directions
1. Cut 4 large sheets of parchment paper into a large heart shape (do this by folding the large sheet in half, then cut out a large 'half heart' shape) and set aside.
2. In a small mixing bowl, toss the julienned veggies with the garlic and parsley, along with some olive oil and salt/pepper to taste. Divide the veggies and place in the center of each parchment package, along the folded seam.
3. Top with a piece of fish, along with another splash of olive oil and salt and pepper. Place 1 tbsp of butter on top of each piece of fish, along with a sprig of fresh thyme. Add approximately 2 tbsp of white wine on top, then paint the edges of each parchment paper package with some egg white, using a pastry brush.
4. Seal each parchment package, then fold along the seal to create a tight parcel that will trap in the steam. Place each filled parchment parcel onto a sheet tray and bake at 400 degrees for 10 minutes.
5. Remove and cut open each parchment package to reveal perfectly steamed fish and vegetables! Garnish with a squeeze of fresh lime juice and serve with a side of rice... enjoy!
