Blood orange and lychee vodka martini with lychee-blueberry eyeballs

Orange and lychee is a combination most people don't think about, but they go together so well! Top the glass with a cocoa powder sugar rim to bring a hint of chocolate goodness. This drink also features lychee-blueberry "eyeballs" to add a fun spooky Halloween feel. Feel free to swap out the vodka for orange juice to make this a kid-friendly cocktail!

Ingredients

For the Glass Rim

  • 1/4 cup granulated sugar
  • 1 tsp unsweetened cocoa powder
  • 1 small wedge blood orange

Drink Mix

  • 1/4 cup fresh blood orange juice
  • 1/2 cup lychee juice or syrup (from a can)
  • 6 ounces vodka
  • 3-5 ice cubes

Directions

For the Lychee "Eyeballs" 

  1. Insert a blueberry into each lychee (using a toothpick to keep in place if needed). 
  2. Set aside until needed.

Rim the Glasses 

  1. On a small plate, gently mix the sugar and cocoa powder and gently shake into a thin layer. 
  2. Rub the orange wedge around the rim of two martini glasses and dip the rim in the sugar mixture. Set aside until needed.

Mix the Drink 

  1. In a large cocktail shaker, combine the blood orange juice, lychee juice, vodka, and ice cubes. Shake until the mixture is thoroughly chilled, about 30 seconds. 
  2. Carefully strain into the two martini glasses and garnish with two “lychee eyeballs” each. Serve immediately. Enjoy!
