Hard apple cider pumpkin spice ice cream float

This cocktail is Ronnie Woo's version of an adult ice cream float! Featuring cinnamon, nutmeg, apple cider, ginger and cloves, it combines all the flavours of all packed into a boozy, fun drink. Feel free to swap the rum for apple cider to make this a kid-friendly Halloween treat!

Ingredients
Pumpkin Spice Mix
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/8 tsp ground cloves
Ice Cream Float
- 4 scoops vanilla ice cream
- 4 oz. rum
- 12 oz. hard apple cider
For Garnish
- Canned whipped cream, for serving
- 2 hard caramel candies, crushed
Directions
For the Pumpkin Spice Mix
- In a small bowl, combine the ground cinnamon, ground nutmeg, ground ginger, and ground cloves.
- Set aside until needed.
Assemble the Float
- Divide the ice cream into two large glasses and sprinkle with 1/2 teaspoon of the spice mixture.
- Add the rum and carefully top off with hard apple cider.
Garnish the Drink
- Garnish with whipped cream, a sprinkle of the spice mixture, and some crushed caramel candies. Serve immediately. Enjoy!
