French toast

Ingredients

  • Bread of choice (ie. brioche, sourdough)
  • 5 eggs
  • 200ml milk
  • 1 teaspoon vanilla
  • Orange zest
  • 2 teaspoons cinnamon
  • 1 tablespoon maple syrup
  • 2 teaspoon sugar

'Peardita':

  • 375ml fresh squeezed orange juice
  • 25ml fresh squeezed lime juice
  • 250ml pear juice
  • 50g picked mint
  • 50g trimmed cilantro
  • 50g honey

Directions

  1. Whisk eggs, milk, vanilla, maple syrup, orange zest, sugar and cinnamon together.
  2. Soak the bread for two to three minutes in the egg mixture before placing into frying pan. Once golden brown on both sides of each slice, pop into oven at 350*F and bake until fluffy.

'Peardita':

  1. Mix all ingredients together in a blender until emulsified. Serve chilled.
