Chocolate Chip Cookie Granola

Ingredients

  • 2 cups rolled oats
  • 1 tablespoons chia seeds
  • ¼ tsp salt
  • 1/2 cup runny cashew butter (or runny peanut butter)
  • ¼ cup melted coconut oil
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/3 cup chocolate chips

Directions

  1. Preheat the oven to 300°F. Line a baking sheet or small baking pan with parchment paper.
  2. In a large mixing bowl, stir together the oats, chia seeds and salt.
  3. In a separate bowl, whisk together the cashew butter, coconut oil, maple syrup, vanilla extract, and almond extract until smooth and well combined.
  4. Pour the wet mixture over the oat mixture and stir until evenly coated.
  5. Transfer the granola mixture to the prepared baking sheet and spread it into an even layer. Press it down firmly with the back of a spoon or spatula to help create clusters.
  6. Bake for 25 to 35 minutes, stirring halfway through, until lightly golden.
  7. Let the granola cool completely on the pan. Store in an airtight container at room temperature for up to 1 week.
