Hot Dates Wrapped with Bacon

Ingredients

  • ½ cup goat cheese, softened
  • ¼ cup pistachios, finely chopped
  • 12 large Medjool dates, pitted and slit open
  • ¼ cup (about 60 g) nduja
  • 6 slices bacon, halved crosswise
  • Hot Honey for garnish

Directions

  1. Heat the oven to 425°F and line a baking sheet with aluminium foil and place a wire rack on top.
  2. In a large bowl mix the goat cheese with the pistachios until well combined. Smear a little nduja into each date, then a little of the goat cheese mixture and press closed.
  3. Wrap each stuffed date with a slice of bacon and secure with a toothpick. Set on the prepared baking sheet and bake until the bacon is crisp, 18–20 minutes. Pull the toothpicks, drizzle with hot honey & serve warm.
