Ingredients
Bananas:
- 4 medium bananas
- 150g dark chocolate, chopped
- 150g white chocolate, chopped
- 2 tbsp coconut oil
Toppings:
- Unsweetened shredded coconut
- Rainbow sprinkles
- Crushed freeze-dried raspberries and blueberries
- Chopped pistachios
- Cocoa nibs
Directions
- Peel the bananas and cut each in half crosswise. Push a popsicle stick into the cut end of each banana, lay them on a parchment-lined tray, and freeze until solid, about 2 hours.
- Add the dark and white chocolate to two medium microwave-safe bowls and divide the coconut oil between them. Microwave on high in 20-second bursts, stirring between each, until fully melted and smooth.
- Working with one banana at a time, spoon the dark chocolate over half the bananas and let the excess drip off, then scatter with your choice of toppings before the chocolate sets, then do the same with the white chocolate. Return to the tray and freeze for another 15 minutes to firm up. Serve straight from the freezer and enjoy!
