No-Churn Cherry Almond Ice Cream

Ingredients

  • 300ml sweetened condensed milk  
  • 237ml whipping cream, whipped to stiff peaks 
  • 1 tbsp vanilla bean paste 
  • 1 tsp almond extract  
  • 1/4 tsp xanthan gum  
  • pinch of salt  
  • 3/4 cup Wild Cherries in syrup
  • 1/2 cup amaretti cookies, finely crushed  
  • 1/2 cup almonds, toasted and finely crushed  

Directions

  1. In a mixing bowl, whisk together the sweetened condensed milk, vanilla bean paste, almond extract, xanthan gum, and salt to combine.
  2. In a separate bowl, whisk the cream to form very stiff peaks. Fold the cream into the sweetened condensed milk mixture, in stages to keep the mixture light.
  3. Transfer the mixture into your container. Add the cherries and syrup on top then delicately swirl in throughout the mixture. Combine the crushed cookies and almonds, then sprinkle on top of the ice cream. Close the container then freeze for 6-8 hours minimum. Then, remove, scoop, and enjoy!
