Coconut Water Popsicles with Fresh Berries and Lime

Ingredients

  • 1½ cups (375 mL) coconut water
  • 3 Tbsp (45 mL) white corn syrup or agave syrup
  • 2 Tbsp (30 mL) fresh lime juice
  • ½ cup (125 mL) fresh mixed berries (blueberries, raspberries, blackberries, sliced strawberries or any combination)

Directions

  1. Have ready a six-hole popsicle mold. Whisk the coconut water with the corn (or agave) syrup and lime juice. Place a few berries into each popsicle mold and then fill to the top with the coconut water. Place the covers and sticks into each popsicle and freeze until firm, at least 4 hours.
  2. To serve, run the popsicle mold under warm water for 5 seconds at most and release the popsicles.

Notes

Even though coconut water is clear, the popsicles freeze a frosty white colour with bursts of coloured fruit.

The berries in this popsicle will freeze solid, but you can still bite through them.
