Tomato Water Bloody Mary

Ingredients

Tomato Water:

  • 1kg very ripe tomatoes, cored and roughly chopped
  • 1 tsp kosher salt

Cocktail:

  • 1 tsp celery salt
  • 1 tsp flaky salt
  • ½ tsp cracked black pepper
  • ½ tsp crushed pink peppercorns
  • 2 lemon wedges
  • 8 oz tomato water
  • 3 oz vodka
  • 1 oz freshly squeezed lemon juice
  • 3-4 dashes hot sauce
  • 2 tsp freshly grated horseradish
  • Celery stalks for garnish

Directions

  1. For the tomato water, blend the tomatoes and salt until completely broken down. Pour into a cheesecloth lined sieve set over a large bowl and let it drip in the fridge for a few hours or overnight, being careful not to press the tomatoes or it will cloud the water. Once the water has completely drained from the tomatoes you’ll have about 2 cups of tomato water.
  2. For the cocktail, add all the spices to a small plate and mix. To build 2 cocktails, run a lemon wedge around the rim of each glass and dip each into the spice blend and fill with ice. Divide the tomato water, vodka, lemon juice, hot sauce and grated horseradish between the two glasses and stir. Garnish with a celery stalk and enjoy!
