PEI potato chips with lobster dip

Ingredients
Lobster Dip
- 1 can of lobster
- 1 cup mayonnaise
- 1/2 cup sour cream
- Zest of 1 lemon
- 1 tablespoon lemon juice
- 1/4 bunch parsley
- 1/4 bunch of dill
- Salt and black pepper, to season
Potato Chips
- 3 lb potatoes
- Vegetable or canola oil, for frying
- Salt and black pepper, to season
Directions
Lobster dip
- Finely chop lobster.
- Mix mayonnaise, sour cream, lemon zest, lemon juice, parsley, dill, salt and pepper well in a bowl.
- Set aside for serving.
Potato Chips
- Thinly slice potatoes with a mandoline, then soak in ice water for at least 30 minutes.
- Remove the potatoes from the water and pat dry to remove the moisture.
- Heat oil to 365°.
- Fry the potatoes in batches until golden brown and crispy, about three minutes.
- Remove the potatoes and transfer to a paper towel-lined baking sheet and allow to cool in a single layer.
- Season with salt and pepper.
- Serve chips with lobster dip. Enjoy!
