PEI potato chips with lobster dip

Bring Prince Edward Island to the dinner table with this unique chip and dip combo. 



Lobster Dip

  • 1 can of lobster
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • Zest of 1 lemon
  • 1 tablespoon lemon juice
  • 1/4 bunch parsley
  • 1/4 bunch of dill
  • Salt and black pepper, to season

Potato Chips

  • 3 lb potatoes
  • Vegetable or canola oil, for frying
  • Salt and black pepper, to season


Lobster dip

  1. Finely chop lobster.
  2. Mix mayonnaise, sour cream, lemon zest, lemon juice, parsley, dill, salt and pepper well in a bowl. 
  3. Set aside for serving. 

Potato Chips 

  1. Thinly slice potatoes with a mandoline, then soak in ice water for at least 30 minutes. 
  2. Remove the potatoes from the water and pat dry to remove the moisture.
  3. Heat oil to 365°. 
  4. Fry the potatoes in batches until golden brown and crispy, about three minutes. 
  5. Remove the potatoes and transfer to a paper towel-lined baking sheet and allow to cool in a single layer. 
  6. Season with salt and pepper.
  7. Serve chips with lobster dip. Enjoy!
