Ingredients
FISH

2 4-ounce (113 g) sable fish fillet

3 tablespoons (45 ml) miso paste

2 tablespoons (30 ml) honey

2 tablespoons (30 ml) mirin
-
2 teaspoons (10 ml) rice wine vinegar

2 tablespoons (30 ml) butter, browned
GARNISH
-
1 tablespoon (15 ml) shiso leaves
-
1 tablespoon (15 ml) bonito flakes
-
1 tablespoon (15 ml) black and white sesame seeds
EQUIPMENT

Cedar plank, water soaked 1 hour
Directions
- Heat barbeque to 350 F (175 C).
- Place cedar plank on grill to heat for 20 minutes.
- In a bowl combine miso, honey, mirin, vinegar, butter.
- Completely immerse the fish in the mixture.
- Set aside marinated fish for one hour.
- Spray the cedar plank with water.
- In the barbeque place the fish on the cedar plank.
- Let cook covered for 10-15 minutes or to preferred doneness.
- Remove from the grill.
TO SERVE
- Serve the sable fish on the cedar plank topped with shiso leaves, bonito flakes, black and white sesame seeds.
