Zucchini Asian noodle salad

That leftover plain spaghetti never tasted so fresh and delicious. Tossed in a simple Asian dressing with a fresh flavour of that single leftover zucchini makes for a perfect cold picnic noodle salad to pair with the Bahn Mi sandwich. Pack your noodle salad in takeout containers as well for easy and light transport.

Ingredients

Noodle salad

  • Leftover spaghetti noodles
  • Asian dressing (see below for recipe)
  • 1 zucchini
  • Sesame seeds

Asian dressing

  • 1/2 cup rice vinegar
  • 1/3 cup low sodium soy sauce or Tamari sauce
  • 2 teaspoon sesame oil
  • 1 teaspoon ginger, minced
  • 1 shallot, minced
  • 1 tablespoon sunflower or canola oil

Directions

1. To make the dressing, whisk all ingredients together until creamy.

2. To make zucchini sauce, add zucchini in the processor with 3 tablespoons of dressing. Puree until smooth.

3. Toss spaghetti with zucchini sauce and freeing dressing to your liking.

4. Finish with sesame seeds.
